To do what you want you only need to press the central lock/unlock button once either before or after you shut off your X5.
IIRC my SA told me that by default there is a difference in whether you pull the driver's door handle twice or whether you hit the central locking/unlocking button to unlock the doors. The former only unlocks the driver's door and leaves the other doors including the rear hatch locked. The later unlocks ALL the doors. FWIW I know that is how our E53 worked. On the E70s this behavior is adjustable and is remembered by the individual key. So your wife could have the 'safer' setting (only unlock the driver's door) and you could have the all doors unlock setting.
