Had a similar issue; replaced a brand new Wahler thermostat with a Behr, no difference.
Replaced the heater valve, as well. Also no change.

Issue turned out to be a broken transmission thermostat; the one near the bottom of the expansion tank. I replaced that, along with the expansion tank and the temps came back to "normal".

Thank you everyone that has replied with options for this issue.

I dont know why i have had 3 thermostats ( bmw,bwd and another) that would not regulate properly.

As I mentioned at the beginning of the original post, I changed it again with a Dorman last night and sitting at idle it was not warming up properly. Today when I went to work it warmed up with the heat on and stayed at half like it is suppose to.
Now its 56 degrees out right now. we will see next week when it gets below 30 if it stays up.
Crazy that it took the 4th stat to work properly. I have never had 3 stats on any other vehicle not work.

Did you check the fan clutch? It should spin freely when cold.

Outside (ambient) temperature has little to do with how hot or cold your engine runs.

I suggest you unlock your cluster and read operating temps separate from the gauge

They take forever to warm up when idling. Needs to be driven and that can take 5 to 10 minutes to come to operating temperatures.

Good info, thanks. I updated my previous post to reduce confusion. Not clear what you mean by "feeds the A/C." Same thing as turning on the Aux fan, to help the AC condenser air flow, or is it a different function you're talking about?

Confirming that the sender used for the instrument panel gauge is on the rear left side of the cylinder head, under the intake manifold.

Did some googling, and it is still not 100% clear to me what that sensor in the lower radiator hose does. A few locations say it is used to switch the Aux fan on / off. But other reports disagree. Either way, that is not related to the gauge or directly related to coolant temp (other than the aux fan).

On there, it shows how the thermostat, when commanded by the ECU, can change the opening profile vs. temp - to allow opening at a cooler temp.

Perhaps there is some malfunction in that signal going to the thermostat. Simply unplugging the electrical connector at the thermostat would prevent the ECU from opening at a cooler temp, and might be a useful experiment.
