The most significant benefit of the factory trailer connection is that it automatically disables the rear PDC so that you don't have an incessant beeping from the sensors seeing the trailer, and it may activate the trailer stability control if required (but we really don't know, TSC may work without the wiring harness). The largest problem with wire taps is that you can get warning lights on the dash due to the imbalanced electrical load. If you have no warning lights, then the only reasons to change are as noted above.

Is that only if you take the vehicle into the dealership for "reprogramming" after installing the hitch and harness?

My 2003 didn't require reprogramming. Many have installed the hitch wiring and not required reprogramming. Others have had to have it reprogrammed. It appears to depend on the software version installed on your vehicle. Only way to know for sure is to install it and see if it works.
