Person in video removed dash in order to remove center console.

All he needed to do is just pull the parking brake handle as far as it can go and "hold it". That will give him additional clearance to clear center console. Lift from rear and swing up. There is no need to removal dash.
I recently replaced the cup holder and the center console removal was easier than I thought...
