my question is if I replace water pump, thermostat and power steering myself is the valley pan leaking coolant a major issue? <-if you don't mind filling up coolant everyday, and not take it on any long trip, it's not. My bmw is 2001 X5 4.4i V8 with 238,000 kilometres on the clock!

Valley pan job is pretty major on the M62 engine. It's not hard if you're mechanical inclined. I can't imagine paying that much for some work.
