I guess your transmission shop will be fitting the full seal & gasket set so all the seals will be replaced anyway, and not just the rear seal?
The sensor you’re referring to may be the fluid temperature sensor which is part of the internal wiring harness, though I personally don’t see the point of replacing it if it isn’t faulty. If it ever did need replacing at a later date then it’s not a difficult job to do and can be fixed with the transmission in situ.
The one part you should definitely replace is the axial needle bearing between the B-clutch hub and the C-clutch drum.
I always replace the adaptor shaft (6209/C3) bearing too, although it may not strictly be necessary.
