I really would prefer not to do that since I do not want to pay unlimited data on my phone or pay for a separate mobile hotspot charge. Has anyone been happy with the unit with it not having access to hotspot or wifi?

tl;dr - You don't need a hotspot, but it's nice for some apps.
I've used mine with and without a mobile hotspot. It mostly depends on what apps you want to use for music and navigation. If I want to rock Groove and Waze I don't have much choice but to go online. Using Google Maps and bluetooth off my phone eliminates the need for a connection entirely.
I do recommend having at least the occasional connection though (garage, Starbucks parking lot, whatever) for app updates and maintenance.
