I am with you on the wet sponge throttle response thing, seems to be a problem to varying degrees on these vehicles and to make it worse mine doesn't always do it. BMW had a programing update for this that helps but doesn't fix the problem entirely, you might want to check on that. Interestingly scanning the DME seems to reset the adaptive strategy and make it better for a short time until it learns itself back. I kinda sort of had this problem with my e30 and came up with a bit of a fix for it but haven't tried that yet on the X. With you on the stereo as well but I think when I do tear it out I'll be installing a Nakamich TD700 cassette deck so I think I'll be alone with that upgrade!
