When the car starts, and youve disconnected the MAF, the DME automatically uses a default air/fuel map that is PURPOSEFULLY very rich, to protect the motor. In your case this rich map works fine with your air leak.
Start taking things apart, look for cracked pipes, plastic bits, etc

Listen to this advice. It might be worth a one hour diagnosis at an Indy shop with a smoke test if you can’t find it.
