As noted, pull the hitch ONLY if it is an OEM hitch and if it is, make sure you take all 10 pieces to the Hitch assembly incl. bumper support, wiring, trailer module (mounted near battery) and all hardware

Otherwise, I would grab:
seats if they are better than yours,
battery if good
climate control module
pieces of of un-cracked trim
alternator
I might take whole doors if any of yours are rusty
spare wheel if any good
headlights
