The space is very tight so only thin wrenches will work.
Now I realize that the nuts are 11mm and the set I'm looking for doesn't even have 11mm in the set, but it looks so cool I wanted it anyway

That is a tough task. When I took my exhaust manifolds off, I think about half of the studs came out with the nuts, so don't be surprised if that happens. Mine was a 2001 M54B30 with 186k miles, generally no problems due to rust, etc. This was probably the least fun part of the whole job.

I eventually just got every one of them out of there. Each one seemed to require slightly different technique and tools. So it's not like if you just had that one special wrench it would all be easy. The angles and clearances are all different for each nut. Some took a minute, some took 30.

All done from above. Got all my 11 mm wrenches out, ratcheting, fixed, offset, etc. Sockets, too. Frustrating when just turning 1/12 of a revolution is tough, and then you need to do that for 15 full turns to get the stud out. Character building stuff.

And then you'll want to get the studs etc. carefully reinstalled or replaced. Nuts cleaned up or replaced (BTW, they are copper coated steel; threads are M7-1.0). All that to make installation a lot easier than removal, which it should be.

But don't underestimate what will be needed to remove the manifolds once you have them separated from the head. Exhaust, stiffening plate, roll bar (sway bar, stabilizer) all got removed or loosened (stabilizer bar was unbolted but not removed) on my car, and even then it was not easy to do it.

Good luck.
