Aux fan does not spin on MAX setting until engine is at operating temp. AC will blow very cold air once moving (just had the AC charge topped off). Under warm start conditions (truck not sitting overnight), the AC works fine, almost immediate cold air.

Could the AC compressor in some way be triggering, during highway driving conditions, the temp guage issue???
The AC issue is most likely your variable displacement compressor is not compressing the refrigerant to provide the necessary pressure for cooling to occur. Running the engine at high RPM normally will kick start a variable compressor into action.
