The worm gears rotate an angled plate with a ball that "ramps up" and pushes the clutch pack together. You said you watched the animation but there is a YouTube video linked just above it that shows someone manually actuating and testing the mechanism.

It is possible to manually lock it. You would either need to build a controller that would supply voltage to the motors, adjustable voltage = adjustable lock. The other option would be to remove the electronic motors altogether, manually adjust the lock, and lock it in place with some sort of fabricated metal.
