I've been fiddling a little more.
I changed the colours in the following sections to see how it changed on the screen. Within each rom_col_x section I alternated only 2 colours.
rom_col - red & yellow
rom_col_1 - blue & green
rom_col_3 - black & white
This is what I have determined so far:
- rom_col - No affect any colour on the system
- rom_col_1 - This sets the scheme for the GPS logo and all colours in colour scheme 1 (ie. the Blue one)
- rom_col_3 - This sets colour scheme 2 (ie. the Brown one)
There are a few exceptions (I haven't found them yet)
- The text for the 'road' icons (the background icons are images)
- The text for city/ocean/lakes/park names
- The N & arrow square in the top left of the screen
- The 'haze' for the sky in perspective mode
These must all lie elsewhere.
What this means
- Full modification of the screen colours is possible
- A 'night mode' could be created in place of one of the schemes used by the system

EDIT: I didn't think to switch the car's lights on/off to see if there was a hidden day/night switch. Maybe...
