It's called Shabu-Shabu. It's Japanese and Shabu actually translates to SWISH. So Shabu-Shabu = SWISH SWISH. It's a type of restaurant, you don't make it at home.
Shabu, you are served a plate of thinly sliced raw meat. You are also sitting in front of a burner that has a bowl of boiling hot water. You dip the meat into the boiling water for about 5 sec. and then you dip the meat in ponzu sauce or peanut sauce. Then you eat, repeat.

It is absouletely delicious. So find a local Shabu house near you. they are starting to pop up in many metro areas. It is probably the healthiest way to eat meat. hmmmmm me hungry now..

The key point here is the meat needs to be sliced paper thin. That's how it is cooked so fast, since you don't want to overcooke the vegitables...
There are many variants of tabletop cooking originated from China. I agree that Shabushabu is the healthiest by all means.

Will it catch fire in the states? I don’t think so. Tabletop cooking in restaurant that meets stringent US fire code is very cost-prohibitive.

I don’t deny any form of tabletop cooking is very fun and health way to cook. If you go to Japanese store there are many portable electrical grills and pot to this. You better be experts on chopsticks, because I cannot imagine any other way.
