Its your personal preference. If you don't want powerful engine than 3.0 should be good enough.
X5 does handle good in snow. Most people who put snow tires do that because they have 20" performance tires. Having 2 separate tires/wheel sets allows you to enjoy in summer with performance tires and play in snow with winter tires. Winter tires grip like studs in snow.
