People are going to fight certain extreme examples as a way of evening the playing field. So it's not so much about being Politically Correct, it's more about not having religion (especially if it's just one religion) becoming "state sanctioned". And if holiday's are going to be considered, recognized, PAID FOR BY TAX DOLLARS, then everyone deserves the right to enjoy it equally.
