Unfortunately, I find this happens rather often. Most people are only offended when it is their own kind that the joke is aimed at. Being Jewish, and having many Jewish friends who forward me their emails, I'd say about once a week there is something anti-Arab or anti-Muslim that is meant to be funny, but which most Arabs or Muslims would probably find offensive.
I don't find it to be a big deal. I think the world has gone way too far in being so PC. A joke is a joke. When people are not joking, that is when there is a problem.
