I would like to know whether I can cut the cable and then re connect it with a click together type socket connector which I plan to situate on the cable at a point where it is under the back seat cushion. Also if this is possible, do you know how many individual wires there are in the cable, and whether or not there is a connector available that I could use.

Do
not cut the DICE cable, this is a good way to ruin the DICE and/or iPod if connected incorrectly. This will also void the warranty.
A better idea would be the use of a rubber grommet to close up the hole after drilling.
