That's close, but actually its just the air being compressed forward of/at the leading edge of the wing and intake. You see the "white" because as the air is compessed it in effect "squeezes" the water out of the air. While this isn't exactly accurate it close enough in laymans terms to get the idea.

The wake on the water is simply the air from wing/fuselage.

Cool video though.
