After doing this it was brought to my attention that I in fact do not have DSP. However I have a DSP section in the sterio settings munu... I'm thinking that I'm missing some sort cable to allow text to be shown on the LCD because truly there isn't much involved if any to punching buttons on the head unit and getting this working.

The DSP adaptor is only to provide audio and will have no impact on what is displayed on the nav screen. If you have a 2003 or newer X5 then there's a 99% chance that you don't need the DSP adaptor (even if you have DSP in your X5).
What you would do with the update files is to update the firmware in the IceLink control unit. There are instructions on how to do the update that come with the firmware files. Basically they are encoded MP3 files that you load on your iPod and play them like songs. This transmits information to the IceLink to update the firmware.
