Make sure you measure the amount of liquid in the pot first. Put the "Big bird" in the pot first, dump some H2O until you reach the right amount of liquid, take the bird out and mark where the top of the liquid have reached. I was going to pour in the oil cold and place the turkey in the pot to get the right level but your idea seems better. No fires tomorrow but I will have an extinguisher approved for oil fires ready just in case.
