Parallels announced an update to version "5540" at the end of October that supports Leopard,
LINK. Did you download the update?
"The latest beta build — version 5540 — features support for Mac OS X v10.5, and also adds the ability to use two identical CD or DVD drives in virtual machines"
In addition, when you were upgrading the OS, did you choose the "Archive & Install" method, and check the box that said something like "Save preferences and system settings" from the options area?
