All your desires are possible. It's covered extensively here in forum. You can purchase the bmw factory NAV and have it installed - that can run you $2700, then a DICE ipod integration kit - $150 (more with DSP i think), then bluetooth, i've seen it as high as $900 i think.

I was considering all this as well - So i did some of my own research - you can get a double DIN in dash NAV unit that you can connect a bluetooth, and ipod features too - and connect the unit to steering wheel for controls. the pioneer avic-d3 or avic-z2. take a look at ebay, I've seen an avic d3 package for $700 (bluetooth and ipod included). if you can get more info on how the bluetooth works and how ipod works (is it just an aux input i.e. no display/controls for ipod on radio). The avic z2 is a little more expensive, but is newer i think. i personally went DICE and Sirius - decided to get a bluetooth headset and wife's company gave her a Garmin...
