I don't see why it wouldn't work. I'm thinking of doing something similar. I now have a stick-on E-Z Pass holder and probably going to wrap it in black paper (so it looks good from inside and out).
I have used my E-Z card with another parking card (twice the thickness of a credit card) in front of it and the E-Z pass worked just fine.
