This is strictly dependent on which phone you are using. You have to do it on your phone handset, not the car controls. Like Ajogu said, you should have an option somewhere on your phone. For example, on my current phone (Samsung Ace, using Windows Mobile), click Menu/Turn Handsfree Off (or something like that).
