Don't forget Pietrasanta, La cinque terra, Santa Margherita, and Portofino if you drive north from Pisa or Firenza. If you head towards Milan (a BITCH to drive in..so is Rome), be sure to stop in Lake Como...another beatiful place. I spend about 13 weeks a year traveling in Italy (Viareggio, Lucca, Ameglia) but it's all work (some good food and wine) and typically in four day bursts.
Watch the parking tickets and speeding fines...they will follow you home, and by the time you get the ticket here they're normally pretty steep with all the penalties and rental company surcharges. Many cities like Firenza (Florence) and Lucca have cameras at the entrances and if you don't have a parking/entry decal, you get fined.
