The white being blown out on the swan was due to the dynamic range of the camera, not you. White swans on a black pond is an extremely difficult shot to get perfect with any camera and you did a good job.(as is a wedding couple, white dress and black tux in the same pic really exposes the capabilities of any camera), I wouldn't use the swan pic as an example of how great your Nikon handles dynamic range however, because it clearly blew the whites.
