You can pair up to 4 devices. Only one device can have an active handsfree connection at any one time.

The iPod touch does not contain a mobile phone, and would not be any use paired to your car. The audio support is not stereo (A2DP) in the car, it is mono low bitrate for voice use only (HFP).
