I really liked the Intrepid air museum in Manhattan. Your son might like that - they even have a Blackbird up there on display.

Once in Canada, you can also take a helicopter tour of the falls. They also offer a jet-powered boat ride along the Niagara river. Alternatively, you can take one of the "Maid of the Mist" rides in a larger boat that actually drives right up to where the falls "fall". Crazy experience.

Bring dry clothes, cuz you'll get soaked on most of the funnest attractions.
