If you haven't disconnected one of the temp sensors, then your focus is on the wrong stuff.
your temp in the video posted is ALWAYS in blue. And the vid is about 3 minutes long. My M54b30 engine has the temp dial a looong time in the middle after driving that long under those ambient temps.
There might be a combination of things: a bad temp sensor, and I think it's the dual temp sensor located on the engine - in the back, and after your long post with the scan - something fishy with the O2 sensors. But this might be due to a hot engine, which reports cold temps.
