18" wheels to 19" wheels
Current configuration: 245/40/18 F 275/35/18 R Now for the 19" wheels what tires would I use? I'm guessing: 245/35/19 F 275/30/19 R

Not the tar xpert, but using the tire size calc., your "front" idea is right on and nearly identical, before and after. Your rear "after idea" comes up nearly an inch less dia., 1/2 inch less radius and nearly 3" less circum. You need a bigger tar on the rear. I did the math on it too and thought the back looked shy, however, both TireRack and a few other web sellers claim that those are the correct sizes.
