Yes. It's that simple. Do it. It's adjusted out further and further it's entire life. Now you put a nominally smaller disc over it (the drum portion is unworn so it should be smaller in diameter than your old one). If you don't adjust the parking brake, you will have pad to disc contact, assuming your adjusters have been working properly.
I always put antisieze on the adjusters to keep them moving freely. Spin the adjusters all the way in and the back out until the parking brake pads just touch the rotor (drum portion). Then back off (I forget how many clicks, but Bentley likely has it).

Do you want the easy way or the proper way.
Easy way is to take off one lug nut, jack up the rear of the X. Lower the parking brake, and turn the adjuster clockwise or counterclockwise depending the side you're working on until you cannot turn the wheel at all. Then back off approx 8-10 clicks and you should be able to spin it freely. Check it via the handbrake in the cabin, it should lock on with 4-5 clicks. Count your clicks on each side, they should be similar as you don't want one side tightened more than the other.
