A/C Very Slow to Start Cooling
The odd thing is that I also have a 2011 328i and a 2011 MINI Cooper S doing the same thing. But of the three, the X seems to the worst. The refrigerant seems to be fully charged, but I'm not an A/C expert, so I'm hoping to get some ideas for troubleshooting.

The auxiliary fan is not kick on when the A/C button is pressed. Common issue with X5s. Mine does the same thing. Due to condensation steaming out the center vents and a good explanation from srmmmm, I suspect mine may be low on R134.
How old is the clutch fan? When the engine is at full temp or almost there, the clutch fan engaged will help. The auxiliary fan will start up if the engine is hot.

I'll double check the aux fan, but I'm pretty sure it's working. I know for sure it's working in the 328i - I checked. I thought I also checked the X, but now I'm not so sure.
