Anyone with the V8's run into issues where the trans coolers tend to leak coolant?

It's better just to replace it. I did mine at 120k, no leaks THERE for now at least. For now.

Pull and flush it while you have it out. Replace the o-rings. The only real failure I’ve heard of is the thermostat.
The rings degrade over time. I had the same thing. Replaced the rings 5 years ago, no issues. It’s cheap to do, especially if you plan and do it when you are replacing the coolant. There are kits on eBay to also re-ring the coolant hoses, but I’d replace those every 100k
