Gas gauge is possessed, and I have the proof
Does any one have any idea on what would cause this? Doesn't seem like sending unit would make it freak out like this.

you realize that's not the gas gauge. It tells you how much you have left on the tank. since your not moving and at an idle it might fluctuate.

If you wait till the end, I switch over to the gas gauge and it does the same thing. This is not normal fluctuation. I start the car, it says - - -, gas light is on. When I start driving, it starts to slowly go up.

a similar situation occurs on e65 7 series vehicles. Exposed wiring in the fuel level sender harness inside the fuel tank is the cause. When the car is not running, the instrument cluster uses its internal OHM meter to measure the resistance of the circuit of the rheostat. The wiring is shorted basiclly. When you start the car, the instrument cluster sends a voltage reference measurement to the rheostat to determine the voltage drop. Using the instrument clusters test function to read the values of the tanks in liters. and use the Analog to Digial function to read out the data.
