There is a button on the dash that will allow you to turn this on/off

You dont, it will shut off automatically after time. Or simply hold the stop button a bit longer before exiting.

not sure how to disable this, it only freezes 3 times a year here, so I dont mind.

Yea, the factory DVD has its faults, but that's why we test drive a car before buying...there are other non factory options available. Despite its faults I prefer the factory setup. Once your kids are old enough to deal with it themselves these annoyances are forgotten. Personally I wish I never added this feature, the kids will disagree though.
