My iPod Video 60G is slow too... this might have to do with the larger built-in ram.

Do you have Album Artwork on your tracks? They might need to be optimized. In Auto update mode:
1) mount iPod, disable Album Artwork from Preferences
2) update iPod, un-mount iPod
3) mount iPod, and enable Album Artwork again
4) update iPod (you should see "Optimizing...." messages from the status bar on the iTunes.
