Hey congratulations! Popping the question is a really exciting time.
As an Aussie, I would highly recommend New Zealand. They say every country in the world is represented there. You can go to Milford Sound (which reminds me of the fjords in Norway?) Or you can go to the Bay of islands (like fiji), or Franz Josef glacier, or the adventure capital of the world..... Queenstown. Bungee jump, heli copter rides or just chill out in a resort overlooking the lake (like lake tahoe). Dinner at night (skyline) is beautiful. If I remember correctly, there might still be snow for skiing.
We went to Roturua to see the volcanic springs and maori feast and went jet boat racing. Then we just sat back and veged at a lake side chalet only 10 mins form town. Flew out in a helicopter to walk on an active volcano
Just a suggestion, grab a Contiki tour guide for all the great places to see.
