32-bit unless you have some specific reason for 64-bit. More drivers and hardware supported. The larger address space is only required for apps like huge databases. Most multimedia drivers are not optimized for 64-bit yet from what I have heard from MS.

Get at least 2 GB. 32-bit won't see a full 4 GB but if it's in your budget, go for it.

BTW, with Vista, Media Center only works with analog TV and broadcast HD in the US unless you purchase a complete system from a certified MC OEM.
