Perhaps in the Land Down Under they received the variable compressor in 2002,
But the regular compressor was used up to 2006 here in the States.

If the AC is very cold like you say suddenly after revving the RPMs above 3000 rpm, then that sounds like the control valve.
They can be modified to work differently;
But if you don't want to risk buying a new compressor and having the same problem all over again, you can try this, just to get by:
If when driving the X5 above 3000rpm, it doesn't work, it's because the ECU won't allow the compressor to cut in with full throttle or an aggressive throttle position.
So , when driving and you want to force the valve to work without waiting 10 minutes, shift the transmission to manual, drop it down to increase the RPMs to about 3500rpm, without flooring it; cruise for at least 30 seconds until you feel the cold air, then back to auto mode, and it'll be fine until your car sits overnight.

Control valve can be replaced, but you have to remove compressor anyway.

If I had to guess I would say that it is located underneath the bolt next to the black connector.
