I did some reasearch on the boards to find that I might need to change my thermostat (gonna change my water pump, too). Shoud I replace my valve cover gasket and CCV hoses to make sure they aren't leaking? How do I do a vaccum leak test? Also is it time to replace the DISA valve?

If a Tstat stucks open, I would replace it promptly. You're not only waste fuel but also will not have heat. The engine will never get to normal operating temp which is bad for internal part.
To check for vacuum leak, bring it to a shop and do a smoke machine test. The plastic intake tube crack that cause vacuum leak is very common.

Like TMV said you have to smoke it to find the vacuum leak. Chances are with the miles you have you would want to run through all of the vacuum hose changes and plastic air hose changes also. Smoking the engine will reveal the leak. Definitely do the T-stat and water pump for corrective maintenance and piece of mind.
