The last air filter was super clogged, but the spark plugs had a bit of carbon buildup, but no so bad.

The key here is that your mileage has decreased after the work you did. When working on vehicles first position to take is there are no coincidences. That means to check, double check and triple check your work before looking elsewhere. That means to check other areas around your work for things like disconnecting something by accident or breaking a plastic connection that might be causing a vacuum leak etc. and certainly check for codes. Also check if you used the same heat range plugs and be sure they are as good or better than what you replaced. Correct filter, installed properly? Were the injectors professionally cleaned?

Most accurate way to check mileage is to fill it up and drive it for a tank full and then fill it up and check mileage by number of miles you have driven divided by how many gallons it took to refill the tank. Driving should be normal everyday driving as most of us have a mix of type of driving. Checking mileage on a trip is interesting but not likely a good measure of reality.
