Deleting the EWS system would make a used DME replacement become plug and play essentially. Many Porsche owners have their 'ews system' sent out for deletion as well, because the 996 series' anti-theft control modules under the drivers seat are prone to failure with water ingress. And it costs more to replace or repair the modules and get new keys, etc. And likely run into same issues in the future.
Not sure whois doing this service on our older E53's however, they maybe only able to do it on certain control modules for certain engine types but who knows.
