I'm currently trying to remove my aftermarket sub and amp from my 2004 X5 myself rather than go back to a shop, have located the live wire and found it runs to this but what is it?

That's the power distribution box.

ah ha! Is there an easy or recommended way to remove the live cable they've attached to the box?

Just open the box and that "live" cable is just attached to a post via a nut...simple as that.
