How hard was it to get it tight around that centre console if it doesn't stretch ???

it will be fine from the rear up to the part where the trim does upward to the dash, this is where you have to cut middle part, the part that goes onto the center switch is and both but because of the weave style of this vinyl, cutting is ok and will not be obvious if you cut the ends of each one to match.

Personally I don't care for the wood grain trim at all. I have the LeMans Blue trim in my 4.8is and Graphite in my M5, and it gives it a much sportier feel inside (and less like an Oldsmobile). :D
