My 2003 3.0 has 70,000 miles (105,000 km) on it. What do you recommend should be done in terms of service

spark plugs?
brake fluid change
tune up

As you will see on the chart your X is not actually due for an Oil Service untill you hit 75,000 miles. You'll also note that an Intermediate Oil Change should have been done around the 67,500 mile mark.

It's also a little hard to pass comment without indication of recent service history and to that did your vehicle get the recommended 60,000 Inspection II done?
