While I have it apart, I will go ahead and do the tstat (since I already have a new one that I haven't put in yet), new belts, water pump, and possibly the high power pulleys? Any other ideas? I also noticed there is a small oil leak around the oil filter housing, but have not found the source yet...
What else should I check while I'm in here?

Good job finding the problem. I kept throwing belts in my 7, ends up out of the 3 bolts holding on my power steering pump...1 was broken and 2 had almost completely backed out, so the pulley was sitting at a nice angle upwards and just slipping them right off. 3 Gatorbacks later and a pissed of Schucks store, I finally figured out it wasn't thier belts after all Sorry guys.
