There are types of pliers with smooth rounded jaws made to pinch the hoses gently, as well as some smaller screw close type clamps with the same design for pinching. Just be extra careful not to pinch too hard and break the inner liner because it can cause an internal flap that acts as a one way valve causing pressure problems.

Also, if you use a prybar or something to hold the brake pedal down about 1/3rd to 1/2 way the valving in the master cylinder should be closed off not letting extra fluid through after the initial pressure release.

I take it you're changing the calipers or something?
