A friend of my replaced his (older) V8 x5 with a (new) diesel V6 x5 cause the fuel costs where killing him. Depending upon how old, you're looking at either a 4.4 or 4.8 ltr V8; compare this to a 3.0 ltr V6.
Don't have any of the stats (power, ...) in front of me, and it's gonna depend upon which year model your choosing, but unless you're pulling a 3 tonne horse float I suspect that any will have sufficient pulling power for your purposes.
Re offroad, for general activities is should be ok. You're probably looking at 17" tyres minimum, which give you a couple inches ride height over a standard car, which hopefully gives you some feeling about it's offroad capabilities. (But remember, the car has been designed and build around a primary target market who drives on tarmac, so don't kid yourself into thinking that a stock X5 vehicle will perfectly follow a heavily modified offroader (say a 100 series L'Cruiser with custom 3" suspension lift) up a grade E offroad track.)
